MORRO BAY-STYLE AVOCADO CITRUS-HERB CRUSTED SALMON

This recipe celebrates the flavors of the California Central Coast, pairing fresh, flaky salmon with a vibrant, moisture-rich crust made with Morro Creek Ranch Hass avocados, bright citrus, and fresh herbs. The avocado helps keep the salmon incredibly moist while it bakes.
Ingredients:

2 (6-ounce) salmon fillets, skin on or off

1/2 ripe Morro Creek Ranch Hass avocado

2 tablespoons panko breadcrumbs (or gluten-free alternative)

1 tablespoon fresh lime juice

1 tablespoon finely chopped fresh dill (or parsley)

1 teaspoon lemon zest

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 teaspoon olive oil (for baking dish)
Instructions:

Preheat Oven: Preheat your oven to 400°. Lightly grease a small baking dish with olive oil.

Prepare the Crust: In a small bowl, mash the avocado until mostly smooth. Stir in the panko breadcrumbs, lime juice, chopped dill, lemon zest, salt, and pepper until everything is well combined and forms a thick paste.
