AVOCADO BLACK BEAN BURGERS

A satisfying and flavorful vegetarian burger alternative. Mashed avocado acts as the binder and provides moisture, replacing eggs and adding heart-healthy fats to the black bean and spice base. Perfect for grilling or pan-frying.
Prep Time: 20 minutes Cook Time: 10-12 minutes Yields: 4 burgers
Ingredients:
-
1 ripe Morro Creek Ranch Hass avocado, mashed
-
1 (15-ounce) can black beans, rinsed, drained, and patted dry
-
1/2 cup breadcrumbs (or gluten-free alternative)
-
1/4 cup finely diced red onion
-
1/4 cup chopped fresh cilantro
-
1 teaspoon cumin
-
1/2 teaspoon smoked paprika
-
1/4 teaspoon cayenne pepper (optional)
-
1/2 teaspoon salt
-
Black pepper to taste
-
1 tablespoon olive oil (for cooking)
-
4 burger buns and toppings (lettuce, tomato, extra avocado slices)
Instructions:
-
Prepare Beans: In a large bowl, mash the black beans with a fork, leaving some texture (do not over-mash into a paste).
-
Combine: Add the mashed avocado, breadcrumbs, red onion, cilantro, cumin, smoked paprika, cayenne (if using), salt, and pepper to the bowl. Mix thoroughly until all ingredients are well combined and the mixture holds its shape.
-
Form Patties: Divide the mixture into four equal parts and form them into firm patties, about 3/4-inch thick.
-
Cook: Heat the olive oil in a skillet over medium heat. Carefully place the patties in the hot oil. Cook for 5-6 minutes per side, until a golden-brown crust forms and the patties are heated through.
-
Serve: Serve hot on toasted buns with your favorite burger toppings.
